Coconut Chai Baked Oatmeal

Ingredients:

  • 4 Lifestyle Awareness Pu-erh Slim Chai Tea bags
  • 1 cup water
  • 1 banana (sliced into ¼ inch rounds)
  • Butter
  • 2 cups rolled oats
  • ¾ cup shredded unsweetened coconut
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 5 tablespoons maple syrup
  • 1 egg, beaten
  • 2 teaspoons vanilla extract
  • 1 cup full-fat coconut milk (canned)
  • 2 blood oranges peeled and sliced

 

Directions:

  1. Preheat oven to 375. Bring 1 cup of water to a boil, pour boiling water into a large mug, add tea bags, cover, and let steep 5 min.
  2. While tea steeps, butter an 8-in. baking dish, and add banana slices in one single layer.
  3. Once tea is ready, remove bags, and cool tea in freezer until room temp.
  4. In a medium bowl, mix dry ingredients. In a second medium bowl, mix wet ingredients.
  5. Pour dry mixture over bananas and shake the dish until oatmeal is evenly distributed.
  6. Pour wet mixture over dry ingredients. Top with blood oranges and bake for 40 min.
  7. Let cool and serve with a pot of Pu-erh Slim Chai Tea.
